New York, New York, December 28, 2010Marilyn Diamond’s Cleansing Diet Soup and Wrap Recipes

Thai Curry Vegetable Soup

This cleansing diet recipe can be made in the blender in just minutes, to which you can add a variety of raw prepared vegetables. I developed it from a version inspired by my dear friend Matt Amsden’s wonderful raw food book RAWvolution.

For the broth, blend:

3 cups coconut water

cup olive oil

cup lemon juice

1 Tablespoon curry powder

1 teaspoon cumin

1 teaspoon garam masala

For the topping:

1 cups very finely shredded cabbage

1 teaspoon minced red jalapeno, no seeds

2 teaspoons umeboshi plum vinegar

1 cups diced tomato

cup sprouted kamut

1 cups diced cucumber

Very finely shredded or cut cabbage is called a chiffonade. The cabbage slices are extremely thin, and this is best accomplished cut by hand. Toss and squeeze the chiffonade in a prep bowl in which you have mixed the umeboshi plum vinegar and the minced jalapeno.

Serves 4.
