Try this delicious cleansing diet recipe from health and fitness expert, Marilyn Diamond, that you can whip up in your blender!

New York, New York, January 18, 2011Marilyn Diamond’s Cleansing Diet Recipe of the Day

Chili this good that you whip up in your blender? Yes!

Wow! World’s Greatest Chili!

1 cup sun-dried tomatoes, reconstituted for several hours in water to cover

2 large ripe tomatoes, cut in chunks

1 large ripe tomato, diced

1 small sweet red pepper or 4 baby red peppers, seeds removed, coarsely chopped

cup sprouted black beans

cup sprouted kamut

1 cup fresh basil leaves, chopped

minced fresh sweet onion

1 small clove garlic, minced

1 cups water

2 Tablespoons dried parsley

2 Tablespoons dried onion flakes

1 teaspoons chili powder, or more to taste

1 teaspoon cumin

1 teaspoon raw cacao powder

2 teaspoons Nama Shoyu

1 Tablespoon Umeboshi Plum Vinegar

1 medium avocado, diced

4 cups baby spinach

1 Tablespoons extra-virgin olive oil

1 Tablespoon Umeboshi Plum Vinegar

cup minced sweet onion

Grated raw cheddar cheese to taste

Pour the sundried tomatoes into your blender. Add the two large tomatoes cut in chunks and set aside the diced tomato. Add the chopped red pepper, black beans and kamut, chopped basil leaves, sweet onion, and garlic.

Heat 1 cups of water in a saucepan until it just begins to steam. Reduce heat as low as possible and stir in the dried onion flakes, dried parsley, chili powder, cumin, raw cacao powder, Nama Shoyu, and Umeboshi Plum vinegar. Steep this magic concoction well in the hot water for a few minutes to release the flavors completely, and then pour it into the blender.

Push everything in the blender down with your spoon before you tightly secure the lid. Then, set the blender on high, and allow the heavier ingredients to begin to chop as the tomatoes liquefy. You only blend briefly until everything is combined well, but still coarsely textured, probably less than one minute.

Pour the chili into a bowl and stir in the reserved diced tomato and a tad more minced onion, to taste.

Toss baby spinach leaves in olive oil and umboshi plum vinegar, and divide them among three shallow bowls. Spoon equal parts of the chili over the spinach leaves. Top with the diced avocado, pass additional minced onion and the grated raw cheese, to be added to taste.
