Marilyn Diamond’s Cleansing Diet Salad Recipes

Persimmon Pear Salad Died and Gone to Heaven

Ingredients:

  • cup flame raisins
  • cup goji berries
  • cup coconut water
  • 2 medium persimmons, peeled and cut into thin random slices
  • 1 large D’Anjou or Comice pear, peeled and cut into thin random slices
  • 1 large banana, diced
  • 1/3 cup walnuts
  • 1/3 cup sliced honey dates
  • 1/3 cup sprouted or natural pumpkin seeds
  • 1/3 cup cacao beans
  • Dash of Himalayan salt, optional
  • Cashew Cream to taste
  • Agave nectar to taste

  • Soak raisins and goji berries in coconut water in a medium prep bowl, as you peel and slice fruit directly into the same bowl. Add walnuts, honey dates, pumpkin seeds and salt, and mix well. Spoon mixture into shallow bowls, top to taste with Cashew Cream and agave nectar.

    Serves 2.
