The relatively low consumption of rice compared to other Latin American countries provides considerable scope for dried processed food to grow. Potatoes and corn tortillas are eaten as rice substitutes in many meals, however, rice consumption is increasing, as prices of substitute products such as corn increase in Guatemala.
