Westminster, CO -- (ReleaseWire) -- 07/09/2014 --Jennifer Brusco, Marketing Specialist for TraceGains shared the top ten food trends revealed from attending the Institute of Food Technologists’ (IFT) Annual Meeting and Food Expo held recently. Brusco shared some of the trends below:

1. Waste Not, Want Not. One-third of all food produced globally is lost during harvesting, processing and distribution, or wasted in production or retail and food service.

2. "You Can Trust Us.” Consumer trust has been understandably shaken in light of recent food safety scares and scandals. In fact, two-thirds of consumers prefer to buy food if its origin is known, 29% find local claims to be very or extremely important when making purchasing decisions.

3. Simpler Pleasures. Global consumers indicate that rising prices affect which groceries they buy, leading to an expected increase in budget cooking ingredients like cheaper cuts of meat and canned or frozen fruits and vegetables.

4. Look Out for the Small Guys. Small-scale innovators are making a big impact on the industry. Global launches of hand-crafted or similar claims rose 60% in 2013 from 2012. For example, despite declining beer sales, craft brewers and ingredients associated with "craft snacks" developed by smaller companies saw growth.
